1. A Savory Stew Paired with Rosé

Paired with the Contratto For England Rosé Brut Pas Dossage, this sparkling 100% Pinot Noir comes from the oldest producer of sparkling wine in Italy. An Italian-American fish stew, the Cioppino features shrimp, clams, and cod with poblano pepper, tomato, and herbs.  It is also served with grilled ciabatta bread.

A classic Italian dish, Osso Bucco is typically made with veal shank and stewed with wine, vegetables, and seasonings.  RARE’s seasonal version is prepared using center-cut Colorado lamb shanks, lamb sugo, buckwheat polenta, kale, and gremolata.
