RARE’s menu changes seasonally, but we consistently keep a delicious Risotto option and alter to highlight seasonal flavors. For the summer menu, we have a delicious Risotto Stracotto made with aged Carnaroli rice, braised beef, hand-torn bread crumbs, Gremolata, and Sugo d’Arrosto.
Most are familiar with Risotto, an Italian rice dish, and this season’s take includes Stracotto, which is like an Italian pot roast. Stracotto is a method of cooking roast beef in a sauce of Chianti wine, tomatoes and vegetables over low heat for an extended period of time. This process of cooking makes the beef very tender and full of flavor.
Our Risotto Stracotto includes Gremolata and Sugo d’Arrosto. Gremolata is a classic Italian condiment made from chopped herbs of lemon zest, garlic, and parsley. Sugo d’Arrosto translates to gravy – and is usually made with the leftover pan drippings after making a delicious meat in oil, wine, and herbs (careful not to drool on your keyboard).
